22/8 Belgium Beer Week Special 第一炮 – Antidoot 2021 Summer Release Private Tasting Class 分享學習班(已滿額)

Belgium Beer Week 由2020 開始,喺8月最後一星期搞嘅,本身只係比利時限定,佢哋上年連合咗60幾間比利時當地嘅酒廠、酒吧一齊搞呢個活動,包括有 Brussels Beer Project, La Source 酒廠, Beer Lover Bar 呢啲,

今年搞到第3年佢地連合埋當地 Flanders 地區嘅發展局 VisitFlanders,想將個活動推廣到世界各地,活動日期係 22-29 Aug! 香港好榮幸成為佢地其中一個邀請嘅城市, 所以山洞都拎D 好酒出嚟, 同大家一齊學習分享!

比利時嘅傳統酒款大家都飲得多, 新派而限量嘅酒廠大家又有冇試過? 今次第一炮想同大家一齊學習同分享嘅係 Antidoot Wild Fermentation!

Antidoot 係一家比利時 Wild Farmhouse 啤酒/Cider/Wine廠. 佢哋只係使用本地野生酵母進行所有發酵, 佢地用比利時傳統釀造 Lambic 嘅方法釀酒, 由於佢地會加入佢地自己既創意, 所以佢地唔會叫自己既酒做 Lambic, 好多時仲會加入 Cider/Wine 既元素落支酒度.

釀酒師 Tom Antidoot 強調佢地既酒係 Easy to drink, 所以全部既酒都好易飲~ 佢地既酒平時只係賣俾會員同埋比利時指定地方先有, 或者係日本 Pigalle/韓國 Coolship 搞過 Tasting, 今次因為 Belgium Beer Week, 山洞拎左5支佢地2021 Summer Season 既酒同大家一齊學習分享:

1) Analogia 2020/2021
A wildly fermented, barrel aged cider (made from untreated and handpicked local apples
from high standard trees, fermented on the skins of Sauvignac, Riesling and Pinot Gris),
blended with a beer and wine made from our homegrown Sauvignac grapes. This blend
consists of 70% cider, 20%beer and 10% wine.

2) Cornucopia ‘W’
A wildly fermented, barrel aged cider, made from untreated and handpicked local apples
from high standard trees, blended with some wine we made from Muscat Ottonel grapes
from Domaine Lindenlaub in Dorlisheim, Alsace.

3) Sitopia 2021
We added freshly pressed rhubarb juice and elderflowers (one day of maceration) to a wildly
fermented, barrel aged cider, made from untreated and handpicked apples from high
standard trees.

4) Gorsem/Pinot Noir
We added local tart cherries of the Gorsem varietal to a beer which was aged together with
wine we made from Pinot Noir, Regent and Cabernet Jura grapes

5) L’Ambigu Riesling 2020-2021
In late summer 2020, we made a macerated wine from biodynamically cultivated Riesling
grapes that we picked at Weingut Melsheimer (Mullay-Hofberg). After primary fermentation,
we added the wine to a barrel of beer we brewed 9 months earlier. They were aged for 9
more months in the barrel together.
