Haute Voltige Release Party + TTO Atelier Constant Berger @Bruxelles

Last year we collaborated with the wonderful people behind Atelier Constant Berger in Herve, to create a hybrid beer between cider and barley wine.

We collected freshly squeezed apple juice loaded with wild yeasts, which we blended with freshly brewed beer wort, and the whole thing fermented spontaneously, without any added yeast.

We fermented this hybrid drink for 8 months in a barrel maintained at a low temperature (10°C).

Finally, the result was divided into three different batches. A “plain” version, a cold-hopped version with Citra, and an elderflower version.
